Pumpkin Cheesecake ~

A wonderfully delicious alternative to pumpkin pie. Just in time for Thanksgiving!


  • 3/4 c Graham Cracker Crumbs
  • 1/2 c finely chopped pecans
  • 1/4 c firmly packed brown sugar
  • 1/4 c granulated sugar
  • 1/2 stick unsalted butter, melted

Combine all ingredients. Press into 10-inch Springform pan. Freeze for at least 15 minutes.


  • 1  1/3 c canned pumpkin
  • 3  lg eggs, room temperature
  • 1  1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 c brown sugar
  • 3/4 c granulated sugar
  • 1  1/2 lbs cream cheese
  • 2 T heavy cream
  • 1 T cornstarch
  • 1 tsp vanilla

Whisk pumpkin, eggs and spices. In mixer, combine cream cheese and sugars. Add cream cornstarch and vanilla. Add pumpkin mixture. Pour into crust. Bake at 350 degrees for 45 minutes or until filling is set. (For best results, bake in a water bath). Let cool in pan. Cover and chill overnight. Garnish with whipped cream.
