Tomato Soup Recipe ~


  • 4 T butter
  • 4 lg shallots or 1 med onion, peeled and chopped
  • 2 1/2 tsp salt
  • 3 lbs tomatoes, peeled, seeded and chopped
  • 2 c chicken stock
  • 2 c whole milk
  • dash white pepper
  • 1/2 c heavy cream
  • 1 c loosely packed fresh basil, cut into ribbons

Sauté onion or shallots in butter just until wilted. Stir in salt and tomatoes. Cover and cook slowly 10-12 minutes until tomatoes are soft. Transfer to food processor. Puree until smooth. Return to pan. Stir in chicken stock and milk. Season with white pepper. Heat gently. Add cream and basil. Serve hot.

I am a public library located in southern Maine. I am open 42 hours per week and serve over 6,000 patrons.
